This dish has 3 parts: Shrimp, Veggies, and Rice.
QuickThaw: QuickThaw shrimp and veggies by submerging well-sealed bags in water for 10–15 minutes. Rinse shrimp thoroughly and drain. Rinse rice.
Cooking Method: QuickThaw/Sauté
Shrimp: Heat a sauté pan over medium heat with a little olive oil. Sauté shrimp for 2–3 minutes. Set shrimp aside.
Rice and Veggies: In the same pan, add veggie mix and cook for 2–3 minutes. Stir in rice and sauté for 1 minute. Add 2 1/2 cups room-temperature water. Bring to a boil, then reduce heat to very low. Cover and simmer 18–20 minutes, until rice is done.
Finish: Toss shrimp into rice just before serving.
Internal temp: 145°F.
Serving Suggestions: Serve with a green salad. Pinot Gris.
